How does soy sauce get its flavor?
- The unique flavor of soy sauce is made up of five tastes: bitterness, saltiness, sourness, sweetness, and umami. These tastes are formed naturally during the fermentation process of soybeans. Aspergillus oryzae breaks down the proteins in soybeans into over 20 types of amino acids, with umami flavor coming from these amino acids.
- The umami specifically comes from the breakdown of soybean protein into amino acids by enzymes from the microbial community.

What is “First Draw Soy Sauce?
- Each batch of fermented soy sauce can be drawn three times, with the first draw referred to as “first draw” soy sauce.
- Only one first draw can be extracted from each barrel of fermented soy sauce. First draw soy sauce is the highest quality and has the richest flavor, making it more expensive than regular soy sauce.

The amino acid nitrogen level reflects the umami taste of soy sauce. Premium soy sauces have an amino acid nitrogen content exceeding 0.8g/100ml. The higher the content, the better the flavor and quality.
